It’s impossible to stop at one of these ooey-gooey morsels with molten mozzarella, cherry tomatoes, and fresh basil! Finally, a healthy, low-carb option for party snacking that’s so delicious you won’t even miss the crust!

  • Yields: 20-25 Pizza Bites


2 large Zucchini, cut into 1/4-inch thick rounds

Pizza Sauce (Or if you’re really feeling adventurous try making this recipe for TANGY | SWEET PEPPER SAUCE

Fresh Mozzarella Cheese — Vegan version, sub cheese for vegan cheese

Cherry Tomatoes

Extra Virgin Olive Oil (EVOO)

Sea Salt, Ground Black Pepper, Garlic Powder, Basil

Fresh Basil, chopped

3 Fresh Garlic Cloves, finely minced


1Wash and slice your Zucchini into 1/4-inch thick rounds

2Lightly coat both sides with a little EVOO and sprinkle on your spices

3Place Zucchini rounds in Grill Pan (if cooking on stove top, set heat to medium-high) and cook for 2 mins on each side

4Slice your cherry tomatoes and cheese into small pieces, chop fresh basil and finely mince garlic cloves

5Add a little Pizza Sauce or TANGY | SWEET PEPPER SAUCE to each Zucchini round, then add all toppings

6Line your Cookie Sheet with Parchment Paper and place Zucchini Pizza Bites in the oven at about 375 degrees until cheese has melted

7NOTE: To make larger rounds, slice Zucchini diagonally | A grill pan isn’t necessary; feel free to use a large nonstick skillet to cook the Zucchini rounds.
