BANANA BREAD MUFFINS

This simple recipe is so easy and delicious, which is excellent because once you taste it you'll definitely be baking it again soon! It makes the perfect mid-day treat or a great start to any morning and although you shouldn't... if you just can't help yourself, your going to crave it for a midnight snack! At the end of the day every one will be saying, "How 'Bout That Banana Bread...Muffin"

  • Yields: 12 Muffins

Ingredients

1 cup of Cane Sugar

1/2 cup of Butter

2 Eggs, beaten

4 ripe Bananas, mashed (Only use ripe bananas that have browned and are a bit mushy when you squeeze them inside the peel, you want them to be sweet)

1.5 cups of Unbleached All-Purpose Flour

1/2 tsp. Sea Salt

1 tsp. Baking Soda (Aluminum Free)

1/2 tsp. Vanilla Extract

Directions

1Preheat Oven to 350 degrees

2Cream Butter and Cane Sugar together in a large bowl until they are well mixed

3Then add Eggs and mashed Bananas, mix well

4Now, sift together Flour, Baking Soda, and Sea Salt. Add to creamed mixture

5Add Vanilla Extract and mix all ingredients just until combined. Don't overmix

6Place your baking cups inside a 12 cup muffin tin and scoop about 3 spoonfuls of batter into each cup until all of your batter is gone

7Bake at 350 degrees for approx 55 mins. - To test to see if your muffins are ready, stick a knife into one of the center muffins, then pull it back out. If there's no dough sticking to the knife then your Banana Bread Muffins perfect

8Keep covered in an air tight container or with tin foil. Keeps for approx 10 days in refrigerator or 4-5 days covered if not refrigerated.
