SWEET FRUIT CREPES

We all deserve to indulge in our guilty pleasures every now and then… Take date night to the next level, spoil your mates, and have a glass of wine with this sweet n’ creamy little pastry treat that is so quick and easy to whip up you won’t be able to put it down!

  • Cook: 5 mins
  • Yields: 6 Crepes

Ingredients

PASTRY

1 cup of unbleached all-purpose Flour

1 tbsp. Honey or Agave Nectar

¼ tsp. Sea Salt

1 ½ cups Coconut Mylk

2 large Eggs

3 or 4 drops Organic Vanilla Extract

A little Coconut Oil, to grease your skillet

FILLING

Yogurt (My favorite is Nosa Brand – Honey Yogurt, but feel free to use any flavor you like)

1 Banana

Several Strawberries

Blue Berries

Raspberries

Any other fruits you think might be yummy inside!

DRIZZLE

Agave Nectar or Honey

Directions

1Combine Flour, Agave Nectar or Honey, and Sea Salt in a large bowl and whisk together. In another bowl whisk together Coconut Mylk, Eggs, and Vanilla extract.

2Then add the Coconut Mylk mixture to the flour mixture in your large bowl and beat both mixtures together until all the clumps are gone, leaving it smooth and creamy. Cover your mixture with foil and put in the refrigerator for 15 minutes.

3Set a timer or watch the clock and use this in between time to slice up all of your fruit. I like to cut up enough to fill the inside of my crepes generously, leaving a bit of extra fruit to decorate my plate with a tasty treat!

4After 15 minutes have passed, take your crepe batter out of the refrigerator. Spread a light coating of Coconut Oil around your skillet and get your oil sizzling lightly before you pour in your batter.

5Now, scoop up some batter with a 1/3 measuring cup and pour into your greased skillet, spread your batter in a circular motion around the skillet to create a thin crepe, check the bottom of your crepe and flip over when slightly golden and crisp at the edges.

6Once your first crepe is cooked, place it on a plate and add your yogurt filling and fruit (as much or little as you like) evenly spreading it in the center. Then fold the 2 opposite sides of your crepe into the center, drizzle a little Honey or Agave Nectar on top - enjoy and repeat!!!!

7Trust me…. you won’t be able to eat just one!
