EGGS IN CLOUDS

Start your mornings up in the clouds with this flavorful, protein packed meal! So quick and easy to whip up, giving you all the energy you need to get through the day!

Ingredients

2 Eggs

1/4 cup Red Pepper, diced

1/4 cup Purple Onion, diced

1/4 cup fresh Chives, finely chopped

1/3 cup Mozzarella Cheese, shredded

2 or 3 cloves of fresh Garlic, finely minced

A few pinches of Sea Salt, Black Pepper, and Basil, to taste

A little Butter to lightly grease your glass dish

Directions

1First, chill a stainless steel bowl in the refrigerator, it needs to be cold for your egg whites to whip up correctly.

2Preheat your oven to 450 degrees.

3At this time, rinse off your veggies to remove excess dirt and residue, then mince 2 or 3 cloves of garlic and begin chopping up 1/4 cup each of your red pepper, purple onion, and chives. (Chopping your veggies into small circles and squares will be your best method for perfect texture and flavor)

4If cheese is not pre-shredded, pull out your cheese grater and shred 1/3 cup of Mozzarella Cheese.

5Crack open two Eggs in a medium bowl, keeping your egg yolks separate from their whites. Place yolks individually into two small bowls and set them aside.

6Remove your stainless steel bowl from the refrigerator, pour in your egg whites. Using a hand whisk, whip them up in a quick whisking motion until they are white and fluffy in texture. You’ll know they’ve been whipped enough when they’re the consistency of marshmallow cream. (This takes a minute or two so don’t get discouraged, just keep whipping.)

7Now, add in HALF of your chopped garlic and ALL of your shredded Mozzarella Cheese, Red Pepper, Purple Onion, and Chives to your whipped egg whites. Sprinkle in a pinch or two of Sea Salt, Black Pepper, and Basil to taste. Stir together until ingredients are well mixed.

8Lightly grease the bottom of your oven-safe glass dish with a bit of Butter and scoop in your mixture to form two separate circular shaped clouds, leaving a slight dip in the center of each. (This is where your yolk will be placed.) Be sure to leave enough room between each of your egg white clouds to be able to easily lift them up with a thin spatula after cooking.

9Bake in the oven at 450 degrees for 3 minutes. Take them out and carefully place each yolk in the center of your 2 egg white clouds. Then put them back in the oven and bake at 450 degrees for another 3 minutes.

10Remove them from your glass pan with a flat silicon or stainless steel spatula, placing it fully underneath of each cloud.

11Your egg whites should be a little golden brown and yolk should pop when you stick your fork inside! Sprinkle on the rest of your Garlic, a bit more Sea Salt and Black Pepper if you like, and Enjoy!
